Domaine Alain Chavy

Domaine Alain Chavy is a relatively small vineyard of 17 acres located mainly in the Puligny Montrachet, Burgundy. Established in 2003 by Alain Chavy, the winery produces structured and long-lived white Burgundies. Alain's philosophy is to make restrained wines that express their terroir, with rich fruit flavours and good minerality. 


This Domaine has the distinction of possessing the deepest underground cellar in Puligny Montrachet at 18 feet deep. This is unique as the appellation is notoriously difficult for digging an underground cellar in. Once the grapes arrive in his cellar, Alaininoculates for fermentation in the barrel. Alain uses up to 15% 400-litre oak puncheons in combination with up to 25% new 228-liter Burgundian pièce for ageing. Bâtonnage is kept to a minimum and malolactic fermentations tend to start late and are slow to complete, perhaps because of cold temperatures in the underground cellar.
